About Chama Gaucha
Chama Gaucha Restaurant is a company that was founded in 2008 by João Carlos Ongaratto in San Antonio. The restaurant company is known for their gaucho tacos and they have now grown to have several locations across the United States and one in Panama.
The restaurant chain not only serves their traditional beef, pork, and chicken dishes, but also offers brunch options like potato torta with bacon jam or cachapa con leche.
Chama Gaucha Restaurant is named after the guaje, a metal tool that is used in gaucho’s traditional cooking method. The metal tool allows them to grill meat by placing it over a flame and then flipping until the meat is fully cooked.
John Carlos Ongaratto, who owns the restaurant company, was born in San Antonio that was also where he learned how to cook from his father. He was born in a family that was so dedicated to the restaurant business, his mother even had a job as a waitress and later on his dad who owned their own restaurant.
While he was growing up, Ongaratto learned how to cook from his father who taught him the traditional ways of cooking like grilling over coals. It was this training that helped him to open Chama Gaucha, which translates to’Fiery Axe’ and is named after the guaje tool.
Chama Gaucha opened in 2008 and was a small restaurant that served all-you-can-eat meats like parrillada. It has since expanded to include new locations in Austin, Dallas, and Panama City.
